The number of kilocalories (kcal) in a gram depends entirely on the macronutrient. Fat is more than twice as calorie-dense as carbohydrates or protein — which is why small amounts of oil or butter can contain significant calories relative to their weight.

Fat is 9 kcal/g because fat molecules contain more carbon-hydrogen bonds per gram than carbohydrates or protein, releasing more energy when oxidised by the body. This is why 1 tablespoon of olive oil (14g) contains approximately 126 kcal, while 14g of cooked chicken breast contains only around 23 kcal.

kcal to cal — converting kilocalories to calories explained
There are two units both called "calorie" — and this is the source of almost all confusion in nutrition, food labels, and fitness tracking.
- The food Calorie (Cal, capital C) — used on nutrition labels, in dieting, and in fitness apps. Exactly equal to 1 kcal. This is what you see when a label says "300 Calories."
- The small calorie (cal, lowercase c) — a physics and chemistry unit. Equal to 1/1,000 of a kcal. Rarely used in food or nutrition contexts.
In everyday nutrition — food labels, meal tracking, dietary guidelines — calories and kcal are always the same number. A food label showing "334 kcal" and one showing "334 Calories" contain exactly the same energy. No conversion is needed between them.
When the small calorie (physics unit) is involved: 1 kcal = 1,000 small cal · 1 small cal = 0.001 kcal. This distinction matters in a chemistry lab but is irrelevant for food and macro tracking.
In France and most of Europe (conversion cal en kcal), food labels show energy in both kcal and kJ (kilojoules). The kcal and Calorie figures on those labels are always identical numbers. 1 kcal = 4.184 kJ is the conversion if you need to move between kilocalories and kilojoules.
